Hydroxytyrosol is a polyphenol typically produced by the olive tree (Olea europaea L.). The remarkable antioxidant properties of hydroxytyrosol are based on its ability to interact with specific “targets” in our body and, through them, to activate our endogenous “antioxidant machinery”.
